I’m now living in the mountain area, which has nine months of snow in a year. I’m getting used to this and the weather didn’t bother me that much. It just helped me to understand and to appreciate the summer more than ever.
What I love most about summer is not only the sun, but also the chance for me to do gardening. I’ve got a small plot in our community garden, where I grew a lot of different kind of vegetables such as lettuce, kale, baby spinach, baby bob Choy, snow peas etc. As a Vietnamese, I eat a lot of vegetables, not much meat lol. Therefore, whenever I go to the grocery stores, I spend quite a bit for vegetables. So summer is the time I can grow myself vegetables and eat as much as we want without thinking about the price (because in fact, I realize that eating vegetables in the US sometimes is more expensive than eating meat).
However, there’s one thing I could not grow myself during summer time. That is “fruits”, of course! Oh my god, I love eating a lot of different types of fruits. Though I cannot grow those, I’m still happy because they do have a lot of sales on fruit during summer. One kind of fruit that I always buy when they are on sales is “avocado” (like 50 cent for one). Avocado is a very special fruit and it has also a lot of nutrients for your body such as Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5, B6, E etc. Moreover, avocado contains a lot of monounsaturated fatty acids which is good for our heart. Because of all the wonderful benefits it has, avocado to me is a little bit pricey. So I thought when avocado is on sales, that a very good chance to eat the healthiest fruit for your body.
In Vietnam, avocado is also expensive and in my home town, we cannot grow avocado and so I guess I’ve started eating a lot of avocado since I came to the US. I saw a lot of different ways of eating avocado. At first, I was quite surprised when some people made it like a dipping sauce for snack, some others might add them in a salad or a sandwich. To me, it’s new because in Vietnam I just know that we eat avocado as a fruit or a dessert, not as a savory dish. Therefore, today I’d like to introduce you my recipes of making avocado smoothie. I thought it’s a fun way to eat avocado because the creaminess from avocado itself makes the smoothies like a milk shake. You can sweeten your smoothie a bit with condense milk and enhance the creaminess with some fresh milk. Simple but delicious as always! So let’s try this recipe out.
- Ingredients:
- 1 ripe small avocado
- 1/3 cup milk (80 ml)
- 2 Tablespoons condensed milk (Originally the avocado smoothie should not taste too sweet, but you can always add more condensed milk or sugar as your taste)
- Intructions:
- Cut the avocado in half lengthwise around the seed. Open the two halves and the seed will stick in one half. Use a spoon to scoop out the seed. Then score the flesh avocado and use a spoon to scoop out from the pit.
- Put all the avocado in the blender, pour in milk, condensed milk (and sugar if needed). Blend them all until smooth.
I love making my avocado smoothie really thick and creamy. If you’d like a little bit loose, you can always add more milk or about ½ cup of ice. You can adjust to your taste, so making an avocado smoothie is really simple and flexible, but yet healthy and delicious. Every morning when I wake up, I always think of an avocado smoothie for my breakfast. It would be a good and fun treat for myself.
